Cooking Ingredients Needed:
Mutton or Beef (cut into large pieces)
Basmati or Kalijeera Rice
Shosti Kacchi Biriyani Masala (1 Pack / 40g)
Sour Yogurt, Ginger/Garlic Paste
Fried Onions (Beresta)
Potatoes (halved and fried)
Ghee & Cooking Oil
Salt, Milk, and Kewra water
Preparation Method & Cooking Procedure:
Marination: Marinate the raw meat with sour yogurt, ginger/garlic paste, salt, half the fried onions, and the entire packet of Shosti Kacchi Biriyani Masala. Let it rest for at least 3-4 hours (overnight is best).
Layering: In a heavy-bottomed pot, place the marinated meat at the bottom. Top with the fried potatoes.
Rice Preparation: Parboil the rice with whole spices and salt until 50% cooked. Drain the water.
Assembly & Dum: Layer the parboiled rice over the meat and potatoes. Sprinkle ghee, the remaining fried onions, and a splash of milk/kewra water on top.
Seal the pot with dough to trap the steam. Cook on high heat for 10 minutes, then lower the heat to the absolute minimum and cook on "dum" for 1.5 to 2 hours. Gently mix before serving.
